Ingredients

  • Corn (2 cups, fresh, canned, or frozen & thawed) – The star of the dish!
  • Cream Cheese (8 oz, softened) – The creamy base of the dip.
  • Mayonnaise (½ cup) – Adds extra richness.
  • Sour Cream (½ cup) – Balances the flavors with a tangy touch.
  • Shredded Cheddar Cheese (1 cup) – Gives a sharp, melty goodness.
  • Shredded Pepper Jack Cheese (½ cup) – Adds a bit of heat and extra flavor.
  • Jalapeño (1, finely diced, optional) – For a mild kick of heat.
  • Green Onions (¼ cup, chopped) – Adds freshness and a bit of bite.
  • Garlic Powder (½ tsp) – Enhances the overall flavor.
  • Paprika (½ tsp, optional) – Adds warmth and depth.
  • Salt & Pepper (to taste) – Brings all the flavors together.
  • Butter (1 tbsp, melted) – Helps create a golden, bubbly top.

Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.

Step 2: Mix the Ingredients
In a large bowl, combine cream cheese, mayonnaise, sour cream, cheddar cheese, pepper jack cheese, jalapeño, green onions, garlic powder, paprika, salt, and pepper. Stir until smooth.

Step 3: Add the Corn
Gently fold in the corn until evenly distributed.

Step 4: Transfer & Bake
Spread the mixture evenly into the greased baking dish. Drizzle with melted butter and bake for 20–25 minutes, or until hot and bubbly.
