  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 lb thinly sliced beef or chicken strips
  • 2 cloves garlic, minced

  • ½ teaspoon black pepper

For the Tortellini and Sauce:

  • 1 package (20 oz) cheese tortellini (fresh or frozen)
  • 1 ½ cups beef broth or chicken broth
  • 1 cup heavy cream
  • 1 ½ cups shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional, for added depth)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Cheesesteak Filling

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onions and bell peppers. Sauté for 3-4 minutes until softened.
  3. Add the thinly sliced beef or chicken strips, garlic, salt, and pepper. Cook until the meat is browned and fully cooked, about 5-6 minutes. Remove the mixture from the skillet and set aside.

Step 2: Prepare the Tortellini and Sauce

  1. In the same skillet, pour in the beef or chicken broth and bring to a simmer.
  2. Add the tortellini and cook according to package instructions, usually 5-7 minutes. Stir occasionally to prevent sticking.
  3. Once the tortellini is cooked, reduce the heat to low and stir in the heavy cream, Dijon mustard, garlic powder, and smoked paprika.

Step 3: Melt the Cheese

  1. Gradually add the shredded provolone and Parmesan cheese, whisking constantly until the sauce is smooth and creamy.
  2. If the sauce is too thick, add a splash of broth or cream to reach your desired consistency.

Step 4: Combine and Serve

  1. Return the cooked meat and veggie mixture to the skillet, stirring to combine with the tortellini and sauce.
  2. Simmer for 1-2 minutes until everything is heated through.
  3. Garnish with fresh parsley and serve hot.
