- 1 ½ cups beef broth or chicken broth
- 1 cup heavy cream
- 1 ½ cups shredded provolone cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika (optional, for added depth)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Cheesesteak Filling
- Heat olive oil in a large skillet over medium heat.
- Add the onions and bell peppers. Sauté for 3-4 minutes until softened.
- Add the thinly sliced beef or chicken strips, garlic, salt, and pepper. Cook until the meat is browned and fully cooked, about 5-6 minutes. Remove the mixture from the skillet and set aside.
Step 2: Prepare the Tortellini and Sauce
- In the same skillet, pour in the beef or chicken broth and bring to a simmer.
- Add the tortellini and cook according to package instructions, usually 5-7 minutes. Stir occasionally to prevent sticking.
- Once the tortellini is cooked, reduce the heat to low and stir in the heavy cream, Dijon mustard, garlic powder, and smoked paprika.
Step 3: Melt the Cheese
- Gradually add the shredded provolone and Parmesan cheese, whisking constantly until the sauce is smooth and creamy.
- If the sauce is too thick, add a splash of broth or cream to reach your desired consistency.
Step 4: Combine and Serve
- Return the cooked meat and veggie mixture to the skillet, stirring to combine with the tortellini and sauce.
- Simmer for 1-2 minutes until everything is heated through.
