Ingredients

  • 1 cup cornmeal (yellow or white, your choice)
  • 1 cup all-purpose flour
  • 1/4 cup sugar (optional, for a sweeter cornbread)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted (plus 1 tablespoon for greasing the skillet)
  • Optional add-ins: 1/2 cup shredded cheese, 1/4 cup chopped jalapeños, or 1/4 cup corn kernels.

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C).
  2. Place the cast iron skillet in the oven while it preheats.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.

Step 3: Combine Wet Ingredients

  1. In a separate bowl, whisk together the buttermilk, eggs, and melted butter.

Step 4: Prepare the Batter

  1. Gradually pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  2. If adding extras like cheese, jalapeños, or corn, fold them in now.

Step 5: Preheat the Skillet

  1. Using oven mitts, carefully remove the hot skillet from the oven and grease it with 1 tablespoon of butter, swirling to coat the bottom and sides.

Step 6: Bake the Cornbread

  1. Pour the batter into the hot skillet, spreading it evenly with a spatula.
  2. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 7: Serve and Enjoy

  1. Allow the cornbread to cool slightly in the skillet before slicing and serving. Serve warm with butter, honey, or your favorite topping.
