- Optional add-ins: 1/2 cup shredded cheese, 1/4 cup chopped jalapeños, or 1/4 cup corn kernels.
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 425°F (220°C).
- Place the cast iron skillet in the oven while it preheats.
Step 2: Mix the Dry Ingredients
- In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.
Step 3: Combine Wet Ingredients
- In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
Step 4: Prepare the Batter
- Gradually pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- If adding extras like cheese, jalapeños, or corn, fold them in now.
Step 5: Preheat the Skillet
- Using oven mitts, carefully remove the hot skillet from the oven and grease it with 1 tablespoon of butter, swirling to coat the bottom and sides.
Step 6: Bake the Cornbread
- Pour the batter into the hot skillet, spreading it evenly with a spatula.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Step 7: Serve and Enjoy
- Allow the cornbread to cool slightly in the skillet before slicing and serving. Serve warm with butter, honey, or your favorite topping.
