- 2 large eggs
- 1/2 cup vegetable oil or melted coconut oil
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour (or whole wheat flour for a healthier option)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or raisins (optional, for added texture)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease your loaf pan or line it with parchment paper for easy removal.
Step 2: Mix the Wet Ingredients
- In a large bowl, mash the ripe bananas until smooth.
- Whisk in the eggs, vegetable oil, honey (or maple syrup), and vanilla extract. Mix until well combined.
Step 3: Add the Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), and salt.
- Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Avoid overmixing.
Step 4: Fold in the Carrots and Extras
- Gently fold in the grated carrots. If you’re using walnuts or raisins, fold them in as well.
Step 5: Bake the Bread
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Serve
- Remove the bread from the oven and let it cool in the pan for about 10 minutes.
- Transfer to a wire rack to cool completely before slicing.
