  • 1 cup grated carrots (about 2 medium carrots)
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or whole wheat flour for a healthier option)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or raisins (optional, for added texture)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan or line it with parchment paper for easy removal.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, mash the ripe bananas until smooth.
  2. Whisk in the eggs, vegetable oil, honey (or maple syrup), and vanilla extract. Mix until well combined.

Step 3: Add the Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), and salt.
  2. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Avoid overmixing.

Step 4: Fold in the Carrots and Extras

  1. Gently fold in the grated carrots. If you’re using walnuts or raisins, fold them in as well.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and spread it evenly.
  2. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cool and Serve

  1. Remove the bread from the oven and let it cool in the pan for about 10 minutes.
  2. Transfer to a wire rack to cool completely before slicing.

Notes

  • Use Ripe Bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
  • Grate the Carrots Finely: This ensures the carrots blend seamlessly into the batter, adding moisture without being overpowering.
  • Don’t Overmix: Overmixing can make the bread dense instead of soft and fluffy.
