Instructions
Step 1: Prepare the Spiced Apples
- In a skillet over medium heat, melt the butter.
- Add the diced apples, cinnamon, brown sugar, and a pinch of salt.
- Cook for 5-7 minutes, stirring occasionally, until the apples are soft and caramelized.
- Remove from heat and let the apples cool completely.
Step 2: Make the Whipped Cream Filling
- In a large bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- In another bowl, beat the softened cream cheese with 1/4 cup of caramel sauce until smooth.
- Fold the whipped cream into the cream cheese mixture until fully combined.
Step 3: Assemble the Icebox Cake
- Spread a thin layer of the cream mixture on the bottom of the baking dish.
- Place a layer of graham crackers over the cream, breaking them as needed to fit.
- Spread 1/3 of the cream mixture over the graham crackers, followed by a layer of spiced apples and a drizzle of caramel sauce.
- Repeat the layers two more times, finishing with the cream mixture on top.
- Drizzle more caramel sauce over the top for decoration.
Step 4: Chill and Serve
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
- Slice and serve chilled.
