- 2 large boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons Cajun seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 12 oz fettuccine or your favorite pasta
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
Step 2: Season and Sear the Chicken
- Toss the chicken strips with Cajun seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
Step 3: Sauté the Vegetables
- In the same skillet, add the bell peppers and sauté for 3-4 minutes until tender. Add the garlic and cook for another minute until fragrant.
Step 4: Make the Sauce
- Reduce the heat to medium and pour in the chicken broth and heavy cream. Stir well, scraping any browned bits from the bottom of the pan.
- Bring the mixture to a gentle simmer and whisk in the Parmesan cheese until the sauce is smooth and creamy.
Step 5: Combine Everything
- Return the chicken to the skillet and toss to coat in the sauce. Add the cooked pasta and stir until everything is evenly combined.
- Taste and adjust seasoning with salt and pepper if needed.
Step 6: Garnish and Serve
- Garnish with chopped parsley and serve immediately.
