  • For the Chicken:
    • 2 boneless, skinless chicken breasts (or thighs)
    • 2 tablespoons Cajun seasoning
    • 1 tablespoon olive oil
    • Salt and black pepper, to taste
  • For the Alfredo Sauce:
    • 12 oz fettuccine pasta
    • 3 tablespoons unsalted butter
    • 3 cloves garlic, minced
    • 2 cups heavy cream
    • 1 cup freshly grated parmesan cheese
    • 1/2 teaspoon paprika (optional, for extra flavor)
    • Salt and black pepper, to taste
    • 1/4 teaspoon cayenne pepper (optional, for extra spice)
  • For Garnish:
    • 2 tablespoons fresh parsley, chopped
    • Freshly grated parmesan, for serving

Instructions

Step 1: Cook the Fettuccine

  1. Bring a large pot of salted water to a boil.
  2. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Step 2: Season and Cook the Chicken
3. Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
4. Heat olive oil in a large skillet over medium-high heat.
5. Add the chicken and cook for 5-7 minutes per side, or until fully cooked (internal temperature reaches 165°F/75°C).
6. Remove the chicken from the pan, let it rest for a few minutes, and then slice it into strips.

Step 3: Prepare the Alfredo Sauce
7. In a medium saucepan, melt butter over medium heat.
8. Add garlic and sauté for 1-2 minutes until fragrant.
9. Pour in the heavy cream and stir continuously.
10. Gradually whisk in the parmesan cheese, paprika, cayenne (if using), salt, and pepper.
11. Let the sauce simmer for 3-5 minutes, or until slightly thickened. If it’s too thick, add a little reserved pasta water to reach your desired consistency.

Step 4: Combine and Serve
12. Add the cooked fettuccine to the Alfredo sauce and toss until well coated.
13. Plate the pasta and top with sliced Cajun chicken.
14. Garnish with fresh parsley and extra parmesan cheese.

Notes

  • Make It Spicier: Add more cayenne pepper or use a spicier Cajun seasoning blend.
  • Don’t Overcook the Chicken: To keep the chicken juicy, use a meat thermometer to ensure it’s cooked perfectly.
  • Fresh Parmesan is Key: Freshly grated parmesan melts better and gives the sauce a richer flavor compared to pre-grated varieties.
