Ingredients
Scale
- 1 lb (16 oz) cheese tortellini (fresh or frozen)
- 2 cups cooked, shredded chicken (rotisserie chicken works perfectly)
- 1/2 cup buffalo sauce (adjust to taste)
- 1/4 cup ranch or blue cheese dressing (for extra creaminess)
- 1/2 cup heavy cream
- 1 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Chopped green onions or parsley (optional, for garnish)
Instructions
Step 1: Cook the Tortellini
- Bring a large pot of salted water to a boil.
- Cook the tortellini according to package instructions until tender. Drain and set aside.
Step 2: Prepare the Buffalo Sauce
- In a large skillet, melt the butter over medium heat.
- Stir in the buffalo sauce, ranch or blue cheese dressing, heavy cream, garlic powder, and onion powder. Mix well until the sauce is smooth and creamy.
Step 3: Combine the Chicken and Tortellini
- Add the shredded chicken to the skillet, stirring to coat it in the buffalo sauce.
- Gently fold in the cooked tortellini, ensuring everything is evenly coated.
Step 4: Add the Cheese
- Sprinkle the mozzarella (or cheddar) and Parmesan cheese over the top.
- If you want a golden, bubbly topping, transfer everything to a baking dish, sprinkle the cheese, and broil on high for 2–3 minutes until the cheese is melted and slightly browned.
Step 5: Garnish and Serve
- Remove from heat and garnish with chopped green onions or parsley for a fresh touch.
- Serve warm and enjoy!
Notes
- Adjust the Heat: Use mild or hot buffalo sauce depending on your spice preference.
- Make it Healthier: Substitute light cream and reduced-fat cheese for a lighter version.
- Switch Up the Protein: Try shredded turkey or cooked shrimp instead of chicken.
