Instructions
Step 1: Prepare the Ingredients
- Wash and chop the broccoli florets, dice the potatoes, and chop the onion and garlic.
Step 2: Sauté the Aromatics
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
Step 3: Cook the Vegetables
- Stir in the diced potatoes and broccoli florets.
- Pour in the vegetable or chicken broth.
- Add paprika, salt, and pepper, then bring the mixture to a boil.
- Reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
Step 4: Blend and Thicken
- Use an immersion blender to puree the soup until smooth, or leave it slightly chunky for texture. (Alternatively, transfer to a blender in batches and return to the pot.)
- In a small bowl, whisk together the flour and milk. Stir the mixture into the soup and simmer for 5 minutes to thicken.
Step 5: Add the Cheese
