  • 3 large eggs
  • ¼ cup honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ cup rolled oats
  • 1 ½ cups fresh or frozen blueberries (plus extra for topping)
  • ¼ teaspoon salt
  • 1 tablespoon butter or cooking spray (for greasing the dish)

Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or cooking spray.

Step 2: Blend the Wet Ingredients
In a blender or mixing bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and cinnamon until smooth.

Step 3: Combine with Dry Ingredients
Stir in the rolled oats and salt, mixing until well combined. Gently fold in the blueberries.

Step 4: Assemble and Bake
Pour the mixture into the prepared baking dish, spreading it out evenly. Top with additional blueberries if desired. Bake for 30-35 minutes, or until the top is golden brown and the center is set.

Step 5: Cool and Serve
Remove from the oven and let it cool slightly before slicing. Serve warm or at room temperature.

Notes

  • Fresh or Frozen Blueberries: Both work, but if using frozen, don’t thaw them first to avoid excess moisture.
