Ingredients
Scale
For the Blueberry Sauce:
- 1 cup fresh or frozen blueberries
- 2 tablespoons sugar
- 1 teaspoon cornstarch
- 2 tablespoons water
- ½ teaspoon vanilla extract
For the Cheesecake Swirl:
- 8 oz (1 block) cream cheese, softened
- ¼ cup sugar
- 1 egg yolk
- ½ teaspoon vanilla extract
For the Cake:
- 1¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- ½ cup sour cream
Instructions
Step 1: Make the Blueberry Sauce
- In a small saucepan, combine the blueberries, sugar, cornstarch, and water.
- Cook over medium heat, stirring frequently, until the blueberries burst and the sauce thickens, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract. Let cool completely.
Step 2: Prepare the Cheesecake Swirl
- In a mixing bowl, beat the cream cheese and sugar together until smooth.
- Add the egg yolk and vanilla extract, mixing until fully combined. Set aside.
Step 3: Make the Cake Batter
- Preheat your oven to 350°F (175°C) and grease your cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Mix in the sour cream and milk until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until no streaks of flour remain.
Step 4: Assemble the Cake
- Pour half of the cake batter into the prepared pan and spread evenly.
- Dollop half of the cheesecake mixture and half of the blueberry sauce over the batter. Use a skewer or knife to gently swirl them together.
- Repeat with the remaining batter, cheesecake mixture, and blueberry sauce, swirling the top layer for a beautiful design.
Step 5: Bake the Cake
- Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- Room Temperature Ingredients: Make sure the cream cheese, butter, and eggs are at room temperature for a smooth batter.
- Don’t Overmix: Mix the batter just until combined to avoid a dense cake.
- Customize the Swirls: Use a toothpick or knife to create dramatic swirls for a beautiful presentation.
