Ingredients
For the Crust:
- 2 cups chocolate cookie crumbs (about 20 chocolate sandwich cookies, finely crushed)
- 5 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
For the Cherry Topping:
- 1 can (21 oz) cherry pie filling
- ¼ cup dark chocolate shavings or chips (optional, for garnish)
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 350°F (175°C).
- Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, mix the chocolate cookie crumbs with melted butter until the texture resembles wet sand.
- Press the mixture firmly into the prepared pan to form an even layer.
- Bake the crust for 8-10 minutes, then let it cool while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until fully combined.
- Pour the cheesecake filling over the cooled crust, spreading it into an even layer.
Step 3: Bake the Cheesecake
- Bake the cheesecake at 350°F (175°C) for 25-30 minutes, or until the edges are set and the center jiggles slightly when shaken.
- Remove from the oven and let it cool to room temperature.
Step 4: Add the Cherry Topping
- Once the cheesecake has cooled, spread the cherry pie filling evenly over the top.
- Refrigerate for at least 2-3 hours, or until fully set.
Step 5: Slice and Serve
- Use the parchment paper overhang to lift the cheesecake out of the pan.
- Slice into bars and garnish with dark chocolate shavings or chips, if desired.
