  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Cherry Topping:

  • 1 can (21 oz) cherry pie filling
  • ¼ cup dark chocolate shavings or chips (optional, for garnish)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  3. In a bowl, mix the chocolate cookie crumbs with melted butter until the texture resembles wet sand.
  4. Press the mixture firmly into the prepared pan to form an even layer.
  5. Bake the crust for 8-10 minutes, then let it cool while preparing the filling.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  2. Add the eggs, one at a time, mixing well after each addition.
  3. Stir in the vanilla extract and sour cream until fully combined.
  4. Pour the cheesecake filling over the cooled crust, spreading it into an even layer.

Step 3: Bake the Cheesecake

  1. Bake the cheesecake at 350°F (175°C) for 25-30 minutes, or until the edges are set and the center jiggles slightly when shaken.
  2. Remove from the oven and let it cool to room temperature.

Step 4: Add the Cherry Topping

  1. Once the cheesecake has cooled, spread the cherry pie filling evenly over the top.
  2. Refrigerate for at least 2-3 hours, or until fully set.

Step 5: Slice and Serve

  1. Use the parchment paper overhang to lift the cheesecake out of the pan.
  2. Slice into bars and garnish with dark chocolate shavings or chips, if desired.
  3. Serve chilled and enjoy!
