Ingredients
Scale
To make this melty masterpiece, you’ll need:
- 2 cups cooked chicken (shredded or chopped): Rotisserie chicken works perfectly!
- 1/2 cup BBQ sauce: Use your favorite brand for a personalized flavor.
- 4 slices of bread: Sourdough, whole wheat, or white bread all work well.
- 4 slices of cheese: Cheddar, Monterey Jack, or a mix for ultimate gooeyness.
- 2 tablespoons butter: For toasting the bread to golden perfection.
- 1/4 cup red onion (thinly sliced, optional): Adds a tangy crunch.
- 1/4 cup fresh cilantro (optional): For a burst of freshness.
Instructions
Step 1: Prepare the Filling
- In a mixing bowl, combine the cooked chicken and BBQ sauce. Mix until the chicken is evenly coated.
Step 2: Assemble the Sandwiches
- Lay out the bread slices and butter one side of each slice. The buttered side will face out during cooking.
- On the unbuttered side of two slices, layer one slice of cheese, followed by the BBQ chicken mixture.
- Add a few slices of red onion and a sprinkle of cilantro (if using).
- Top with another slice of cheese, then place the remaining bread slices on top, buttered side facing out.
Step 3: Cook the Sandwiches
- Heat a skillet or grill pan over medium heat.
- Place the sandwiches in the pan and cook for 3-4 minutes on one side, pressing gently with a spatula.
- Flip the sandwiches carefully and cook for another 3-4 minutes until the bread is golden brown and the cheese is melted.
Step 4: Serve and Enjoy
- Remove the sandwiches from the skillet and let them cool slightly before slicing in half.
- Serve warm and enjoy the gooey, smoky goodness!
Notes
- Use Fresh Bread: Choose bread with a sturdy crust for the best texture.
- Experiment with Cheese: Gouda or smoked mozzarella can add an extra layer of flavor.
- Low and Slow: Cook over medium heat to ensure the bread toasts evenly and the cheese melts completely.
- Make it Spicy: Add a dash of hot sauce or sliced jalapeños for a kick of heat.
