Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup BBQ sauce (choose your favorite!)
  • 1 small red onion, thinly sliced
  • 1 cup bell peppers (any color), sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley for garnish

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 400°F (200°C), or heat your grill to medium-high.
  2. Cut 4 large pieces of aluminum foil, about 12×18 inches each. Spray lightly with cooking spray or brush with a little oil to prevent sticking.

Step 2: Assemble the Packets

  1. In a mixing bowl, toss the diced sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  2. Divide the seasoned sweet potatoes evenly among the foil sheets, creating a flat layer in the center of each.
  3. Place the chicken pieces on top of the sweet potatoes.
  4. Add sliced red onion and bell peppers over the chicken.
  5. Drizzle BBQ sauce generously over the top of each packet’s contents.

Step 3: Seal the Packets

  1. Fold the sides of the foil up and over the ingredients, pinching the edges together to create a sealed packet. Leave some room inside for steam to circulate while cooking.

Step 4: Cook the Packets

  • Oven Method: Place the foil packets on a baking sheet and bake for 25-30 minutes, or until the chicken is fully cooked and the sweet potatoes are tender.
  • Grill Method: Lay the packets directly on the grill grates and cook for 20-25 minutes, flipping once halfway through.

Step 5: Serve and Enjoy

  1. Carefully open the foil packets (be cautious of the steam!) and check for doneness.
  2. Sprinkle with fresh parsley, if desired, and serve directly from the foil or transfer to plates.

Notes

  • Even Cutting: Ensure the sweet potatoes and chicken pieces are cut uniformly for even cooking.
  • Double Wrapping: If grilling, double-wrap the foil to prevent any leaks.
  • Make It Spicy: Add red pepper flakes or a dash of hot sauce for a little heat.
