Here’s what you’ll need to make this delicious casserole:

  • 2 lbs ground beef
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup BBQ sauce, plus extra for topping
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables (optional)
  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch casserole dish.

Step 2: Prepare the Meatloaf Mixture
3. In a large mixing bowl, combine the ground beef, onion, breadcrumbs, milk, egg, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
4. Stir in 1/2 cup of BBQ sauce and 1/2 cup of shredded cheddar cheese.

Step 3: Assemble the Casserole
5. Spread the meatloaf mixture evenly in the prepared casserole dish.
6. Add the frozen vegetables on top, if using.

Step 4: Add the Biscuits and Cheese
7. Top the meatloaf mixture with the biscuit dough pieces, spacing them out evenly.
8. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the biscuits.

Step 5: Bake the Casserole
9. Cover the casserole dish with aluminum foil and bake for 25 minutes.
10. Remove the foil and bake for an additional 10-15 minutes, or until the biscuits are golden brown and cooked through.

Step 6: Finish with BBQ Sauce and Garnish
11. Drizzle extra BBQ sauce over the top of the casserole.
12. Garnish with fresh parsley, if desired.
