- 1 teaspoon Dijon mustard
- Zest of 1 lemon

- 1 ripe avocado, peeled and pitted
- Juice of 1 lime
- 2 tablespoons plain Greek yogurt (or a dairy-free alternative)
- 1 clove garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Salmon
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the salmon into chunks and place it in a food processor. Pulse until finely minced, but not a paste.
Step 2: Mix the Meatball Ingredients
- In a mixing bowl, combine the minced salmon, breadcrumbs, egg, garlic, onion, parsley, Dijon mustard, lemon zest, salt, and pepper.
- Mix until well combined. If the mixture is too wet, add a bit more breadcrumbs.
Step 3: Shape and Bake
- Using your hands or a small scoop, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the meatballs are firm and lightly golden.
Step 4: Make the Avocado Sauce
- While the meatballs bake, blend the avocado, lime juice, Greek yogurt, garlic, and olive oil in a food processor until smooth.
- Season with salt and pepper to taste.
Step 5: Serve
- Arrange the baked salmon meatballs on a plate and drizzle with the creamy avocado sauce. Serve extra sauce on the side for dipping.
