  • 1 ripe avocado, peeled and pitted
  • Juice of 1 lime
  • 2 tablespoons plain Greek yogurt (or a dairy-free alternative)
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Salmon

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into chunks and place it in a food processor. Pulse until finely minced, but not a paste.

Step 2: Mix the Meatball Ingredients

  1. In a mixing bowl, combine the minced salmon, breadcrumbs, egg, garlic, onion, parsley, Dijon mustard, lemon zest, salt, and pepper.
  2. Mix until well combined. If the mixture is too wet, add a bit more breadcrumbs.

Step 3: Shape and Bake

  1. Using your hands or a small scoop, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  2. Bake for 12-15 minutes, or until the meatballs are firm and lightly golden.

Step 4: Make the Avocado Sauce

  1. While the meatballs bake, blend the avocado, lime juice, Greek yogurt, garlic, and olive oil in a food processor until smooth.
  2. Season with salt and pepper to taste.

Step 5: Serve

  1. Arrange the baked salmon meatballs on a plate and drizzle with the creamy avocado sauce. Serve extra sauce on the side for dipping.
