Description
Ingredients
Scale
- 1 ½ lbs salmon fillet (skin-on or skinless)
- 1 cup fresh pineapple chunks (or canned, drained)
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
Step 1: Prepare the Marinade
- In a small bowl, whisk together soy sauce, honey, olive oil, lime juice, minced garlic, grated ginger, and red pepper flakes (if using).
- Season the salmon with salt and pepper, then place it in a baking dish lined with foil or parchment paper.
- Pour the marinade evenly over the salmon and scatter the pineapple chunks around it.
Step 2: Marinate
- Let the salmon marinate for 15-20 minutes at room temperature. This step enhances the flavors, but you can skip it if you’re short on time.
Step 3: Bake the Salmon
- Preheat your oven to 375°F (190°C).
- Cover the salmon with foil to prevent it from drying out.
- Bake for 15-18 minutes, or until the salmon is opaque and flakes easily with a fork.
Step 4: Broil for a Glaze (Optional)
- For a caramelized finish, remove the foil and set your oven to broil.
- Broil the salmon for 2-3 minutes, watching closely to avoid burning.
Step 5: Serve and Enjoy
- Garnish with fresh cilantro or parsley for a pop of color.
- Serve warm with your favorite sides, such as steamed rice, quinoa, or roasted vegetables.
Notes
- Use Fresh Salmon: Fresh, high-quality salmon makes a big difference in flavor and texture.
