- 1 bunch fresh asparagus, trimmed
- ½ cup ricotta cheese
- ¼ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 clove garlic, minced
- 1 tsp lemon zest
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- 1 egg, beaten (for egg wash)
- 1 tsp red pepper flakes (optional, for heat)
- 1 tbsp fresh basil or parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Puff Pastry
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry slightly on a lightly floured surface to smooth out creases.
- Place the pastry on the prepared baking sheet and use a knife to lightly score a ½-inch border around the edges (don’t cut all the way through).
- Prick the center of the pastry with a fork to prevent it from puffing up too much.
Step 2: Make the Cheese Mixture
- In a small bowl, mix the ricotta, Parmesan, mozzarella, garlic, lemon zest, salt, and black pepper until well combined.
- Spread this mixture evenly over the center of the puff pastry, leaving the scored border untouched.
Step 3: Assemble the Tart
- Arrange the trimmed asparagus spears neatly on top of the cheese mixture. Lay them in a single layer, either all facing one direction or in alternating patterns for a decorative touch.
- Drizzle the asparagus with olive oil and sprinkle with red pepper flakes (if using).
Step 4: Bake the Tart
- Brush the edges of the pastry with the beaten egg for a golden crust.
- Bake for 18-22 minutes, or until the pastry is golden brown and crispy.
- Remove from the oven and let it cool slightly before slicing.
Step 5: Garnish and Serve
- Sprinkle fresh basil or parsley over the tart for added freshness.
- Serve warm and enjoy!
