Description

This refreshing Asian Cucumber Salad is the perfect balance of crisp cucumbers, tangy vinegar, and a touch of sweetness. It’s a quick and easy side dish that pairs beautifully with grilled meats, rice dishes, or as a light snack. Bursting with bold flavors, this salad is sure to become a favorite!


Ingredients

Scale
  • 2 large cucumbers (or 4 Persian cucumbers)

  • ½ tsp salt

  • 1 tbsp rice vinegar

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp honey (or maple syrup)

  • 1 clove garlic, minced

  • ½ tsp red pepper flakes (adjust to taste)

  • 1 tsp toasted sesame seeds

  • 1 green onion, finely chopped


Instructions

Step 1: Prepare the Cucumbers

  1. Slice the cucumbers thinly using a sharp knife or mandoline.

  2. Sprinkle with salt and let sit for 5 minutes to draw out excess water.

  3. Pat dry with a paper towel.

Step 2: Make the Dressing
4. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, minced garlic, and red pepper flakes.

Step 3: Toss and Serve
5. Add the cucumbers to a bowl and pour the dressing over them. Toss to coat evenly.
6. Sprinkle with toasted sesame seeds and chopped green onions.

 

Step 4: Chill & Enjoy
7. Let the salad sit for 10 minutes to absorb the flavors or serve immediately.

Notes

Refrigerate: Store in an airtight container for up to 2 days.
Best Fresh: The cucumbers may release water over time, so it’s best enjoyed within a few hours.
