Ingredients

For the Apple Pancakes:

  • All-Purpose Flour (1 ½ cups)
  • Baking Powder (2 tsp)
  • Baking Soda (½ tsp)
  • Salt (¼ tsp)
  • Cinnamon (1 tsp)
  • Nutmeg (¼ tsp)
  • Sugar (2 tbsp)
  • Egg (1 large)
  • Milk (1 cup)
  • Vanilla Extract (1 tsp)
  • Unsalted Butter (2 tbsp, melted)
  • Apples (1 cup, grated – any sweet variety like Honeycrisp or Fuji)

For the Vanilla Maple Syrup:

  • Maple Syrup (½ cup)
  • Vanilla Extract (1 tsp)
  • Butter (1 tbsp, melted)

Instructions

Step 1: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.

Step 2: Combine the Wet Ingredients
In a separate bowl, whisk the egg, milk, vanilla extract, and melted butter until smooth.

Step 3: Add Apples & Mix
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the grated apples. Do not overmix; a few lumps are okay!

Step 4: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about ¼ cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

Step 5: Prepare the Vanilla Maple Syrup
In a small saucepan, warm the maple syrup over low heat. Stir in vanilla extract and melted butter. Remove from heat.

Step 6: Serve & Enjoy!
Stack the warm pancakes on a plate and generously drizzle with vanilla maple syrup. Add extra apple slices or a dusting of cinnamon for garnish.
