Instructions
Step 1: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.
Step 2: Combine the Wet Ingredients
In a separate bowl, whisk the egg, milk, vanilla extract, and melted butter until smooth.
Step 3: Add Apples & Mix
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the grated apples. Do not overmix; a few lumps are okay!
Step 4: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about ¼ cup of batter per pancake onto the skillet.
