Pancakes

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 3/4 cup milk

Vanilla Maple Syrup

  • 1/2 cup pure maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Make the Pancake Batter

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, beat the egg, milk, yogurt (or sour cream), and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  4. Fold in the grated apple, making sure it’s evenly distributed in the batter.

Step 2: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  2. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges start to set. Flip and cook for another 1-2 minutes on the other side until golden brown.
  3. Remove the pancakes and keep them warm while you prepare the syrup.

Step 3: Prepare the Vanilla Maple Syrup

  1. In a small saucepan, warm the maple syrup over low heat, then stir in the vanilla extract. Heat for 1-2 minutes until combined, then remove from heat.

Step 4: Serve

  1. Stack the warm pancakes on a plate and drizzle generously with the vanilla maple syrup. Top with extra apple slices if desired.
