- Cold unsalted butter (4 tbsp, cubed) – Helps create the perfect crunchy topping.
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with liners or grease it with nonstick spray.
In a small bowl, mix the flour, brown sugar, and cinnamon for the topping. Add the cold cubed butter and use a fork or pastry cutter to blend until the mixture looks like coarse crumbs. Set aside.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, whisk the melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and yogurt until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Fold in the chopped apples without overmixing.
Spoon the batter evenly into the muffin cups, filling each about ¾ full. Sprinkle the crumb topping generously over each muffin.
Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
