  • 1 teaspoon vanilla extract
  • Zest of 1 lemon for a bright flavor

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C). Line the bottom of a 6-inch or 7-inch round cake pan with parchment paper and lightly grease the sides.

Step 2: Whip the Eggs

  1. In a large mixing bowl, whisk the eggs until frothy and slightly thickened (about 2-3 minutes). If using sugar, add it here and whisk until dissolved.

Step 3: Mix the Batter

  1. Add the yogurt to the whipped eggs and whisk until smooth.
  2. Gradually sift in the flour (or cornstarch) and gently fold it into the mixture until no lumps remain.

Step 4: Bake the Cake

  1. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  2. Bake for 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Step 5: Cool and Serve

  1. Let the cake cool in the pan for 10 minutes, then gently remove it and transfer it to a wire rack to cool completely.
  2. Dust with powdered sugar, top with fresh berries, or serve plain for a simple yet elegant dessert.
